To Easy Mac or not to Easy Mac...

Let's face it, most college students don't have a lot of extra money to spend. It makes sense that when we go grocery shopping we want to stock up on foods like Ramen noodles and Easy Mac, which we can get a package for under a dollar. These aren't exactly the healthiest foods out there. One cup of Kraft Easy Mac has 220 calories! If you eat one twice a week for an entire quarter (10 weeks) that alone is 4,400 calories. Combined with all of the fast food, late night snacks and beer, that is not good news.
Next time you go grocery shopping, pick up some fresh produce for a salad. Lettuce, tomato and onions are classic ingredients in a salad, but the wonderful thing about a salad is that you can put whatever you like into it. If you really want to make a good salad you should try putting in all of your favorite vegetables with some sort of meat or protein, like chicken or hard-boiled eggs. Here is a great recipe for a
Buffalo Chicken Salad. That's one of my faves.

One of the best things about buying fresh produce is that when you are ready to make your salad, you can wash and cut all the vegetables and other ingredients to make a big salad that you eat, and save the rest for another day. It should only take about 10 minutes to make, and you can put it in the refrigerator and save for days, all you have to do the next time you want to eat salad is pour the dressing! Enjoy!
